How To Make Your Own Raw Chocolate

By Will Hamburg on 15th August, 2013

We get asked many times by people, "How can I make Raw Chocolate?" So to answer your questions, we have posted a recipe to get you started. The key to making really good Raw Chocolate is to take your time.

Ingredients:

Organic Raw Cacao Paste

Organic Raw Cacao Butter

Organic Raw Cacao Powder (Optional)

Vanilla Bean Powder

Liquid Natural Sweetener (Agave Nectar, Jeruselum Artichoke Syrup, Liquid Stevia, honey, etc)

Organic Raw Cacao Nibs (Optional)

Organic Raw Almonds (Optional)

Organic Goji Berries (Optional)

Organic Coconut Chips (optional)

Ok, now that you've got some ingredients together, it's time to make your first batch of Raw Chocolate

Place about 1 Cup of Cacoa Butter in a pan on the stove. Keep the temperature as low as possible to maintain the integrity of the Raw Chocolate. If it begins to heat up too much, just turn the burner on and off as deemed necessary.

Once you have melted the cacao butter into an oil, you can now add the Cacao Paste. Wait until both are "liquidy" and then slowly stir in your additional ingredients. Personally, I like to add honey, ground up almonds and a dash of sea salt.

If you are adding a liquid sweetener, make sure you don't add too much! This is often the mistake with first time Raw Chocolate makers, especially when using Liquid Stevia.

Now that all of your ingredients are in the pan and mixed together and you have a perfect amount of sweetener for your taste, pour all of this into a ceramic or glass container. You can also pour it into an Ice Cube tray to have little cubed chocolates. You can also form them into golf ball sized truffles once they cool - as shown in picture below.

Be careful as the ingredients may have become quite hot. Once you've poured them in, I like to put it in the fridge for about 10 minutes and then sprinkle on Cacao Nibs or Coconut Flakes.

Then leave covered in the refrigerator for about 1 hour. Come page to them and sprinkle a little Cacao Powder, Cacao Nibs or Coconut Flakes on them. And you're done! You are officially a Raw Chocolatier! Now you can share with your friends (also optional).

I hope you enjoy!
