These unique Pumpkin Seeds are bigger and darker green than most - and more nutrient dense. They are an heirloom variety organically grown in the Styrian region, the fertile rolling countryside of eastern Austria. This unique cultivar of pumpkin (Cucurbita pepo) has been grown for at least 100 years. It is called the naked-seeded, hull-less, or Styrian pumpkin and is characterized by having a thin membranous seed coat (testa) rather than the lignified seed coat of conventional pumpkin seeds. Therefore, the entire seed is edible. Because of the special pumpkin seeds, the unique climate, the special ripening process, the soil, is a higher quality pumpkin seed than from any other region of the world.
Styrian Pumpkin Seeds create a rich creamy flavor in any dish. Our favorite feature is that they make an incredible raw, vegan Caesar dressing. A must have in your repertoire of whole raw foods!
Sprinkle ground or whole in salad or favorite dish.Caesar Dressing: Grind seeds in a coffee grinder. Mix with apple cider vinegar, olive oil, garlic, salt & water to taste.Seed Pate: Combine ground pumpkin seeds with oil, spices and any other desired ingredients.
Seed Mylk: Blend 1 part Pumpkin Seeds and 3 parts water. Strain through cheesecloth/nut milk bag.
